The main airport at Crete/Heraklion is a military establishment and has a reputation for being strict.
However, although it is a good few years since I was there I do recall watching departures from a tourist area some mile or so from the end of the active, the departures climbing out overhead.
Sorry not particularly helpful, but do have a good holiday.
This reply relaces my original one, posted for several hours, describing Corfu in error!!

Thanks Brian for the info, We'll have a car for a few days so it may help to avoid "loitering" and drawing attention to me. I thinks its a question of "play it by ear". One thing I can guaruntee though is there'll be no bloody rain for a week Ian.

Ian, my wife and I last went to Crete nearly 20 years ago and we stayed at a place call Chania. Chania is/was a little one horse town at the western end of Crete. We landed at a military base called Ioannis Daskalogiannis Airport (easy for me to say) and bussed to our nearby hotel. I never spotted at this airport with it being military and how Greeks are to spotters but on Google Earth there are some photos taken over the fence so to speak so there may be some where to view. There used to be a small airfield near to our hotel that had military Ag-Cats that were flying around all day and no one bothered about me spotting them but I can't find the airfield now on Google so has it been built on. Just nearby is Souda Bay that has lots of naval ships that could carry helicopters. Hope this is of some use to you but if you are at the eastern end it is a good drive to Chania. Regards Beemer.

Ian I have found the airfield I used to visit and it is called Maleme. It has about five old jet aircraft on display there going by the Google Earth photo. This is what I saw in 1992 but things may have changed.
